There’s just something about toast. Crunchy, chewy, and warm, even a plain slice has an undeniable appeal. But adding fancy toppings—like bananas caramelized in coconut sugar—is the fun part. Start with your favorite bread (we like rustic whole wheat or sourdough), add almond butter, and then top it all off with the golden brown caramelized banana slices. It’s a simple combination that makes for a dreamy breakfast or afternoon snack.

For the caramelized bananas:
1 tablespoon coconut oil
4 tablespoons coconut sugar
1 to 2 tablespoons water
3 bananas, sliced lengthwise
For the toast:
3 to 6 pieces of bread (sourdough, whole grain, or gluten-free)
Almond butter
Roughly chopped hazelnuts
Chia seeds
Coconut chips
Caramelize the bananas
Heat coconut oil in a large skillet over medium heat and stir in coconut sugar. Turn heat down to medium-low and let sugar dissolve and start to bubble. Stir in water, 1 tablespoon at a time, until the mixture reaches a smooth consistency. Let cook 30 seconds to 1 minute, then add bananas. Spoon caramel over and let cook 1 to 2 minutes, then flip and cook 1 minute more.
Assemble the toast
Toast bread and spread with almond butter, then top with caramelized bananas. Sprinkle with hazelnuts, chia seeds, and coconut chips to serve.
