When Hung learned his cholesterol was high, he knew it was time for a change. As a lifelong snacker, he didn’t want to give up grazing throughout the day — but he knew it was time to switch to healthier options for himself and his family.

Hung’s Homemade Spring Rolls Recipe
Yield: 2 servings

Ingredients:
2 noodle cakes of brown rice ramen
8 spring roll wrappers
1 bunch of green leaf lettuce
1 bunch of green onion
1 whole English cucumber
½ pound of pork chops
½ pound of deveined peeled shrimp
1 teaspoon of olive oil
Salt and pepper, to taste
For the dipping sauce:
½ cup of creamy garlic, diced
1 teaspoon of olive oil
⅛ – ¼ cup of chicken broth
Instructions:
Bring 4 cups of water to a boil in a large pot. Once boiling, add the brown rice ramen. Stir occasionally. After 5 minutes in boiling water, remove the noodles from the pot and rinse under cool water. Add to a bowl to store until ready.
Rinse lettuce, green onion, cucumber or any other fresh veggies you choose to add. Run through a salad spinner and place in a bed of paper towels to dry. Cut cucumber into long slices. Once veggies are dried, set them on a serving plate.
Heat a frying pan to medium heat. Lightly season the pork chops and shrimp with salt and pepper. Pan-fry the pork chops and shrimp in a bit of olive oil, about 4-6 minutes on each side. Once cooled, cut pork chops into bite size pieces. Set meat aside in a bowl.
For dipping sauce, add 1 teaspoon of olive oil to a small stock pot over low heat. Add garlic and stir until it becomes fragrant. Add hoisin sauce and peanut butter. Stir occasionally while they heat up and slightly bubble. Finally, add chicken broth to thin out sauce to your desired consistency. Once the sauce is done, take the pot off heat and pour the sauce into a serving bowl.
Pour 1 cup of warm water into an extra wide bowl. Use this bowl to rehydrate spring rolls.
To serve, place a wet spring roll wrapper on a plate. Add your choice of ramen noodles, veggies and meat to the spring roll, being careful to leave enough room to roll the spring roll.
Dip each spring roll into a small bowl of the dipping sauce and enjoy! Repeat for all additional spring rolls.
