Potstickers with Avocado, Edamame and Sesame-Lime Sauce Recipe

Ingredients

1 package frozen chicken potstickers*
1 cup edamame
Prepared asparagus 
1 small avocado, pitted and diced
1 ½ cup arugula, or greens of choice
½ cup fresh herbs (try mint and/or cilantro)
¼ cup prepared mustard vinaigrette
2 teaspoons lime juice
1 tablespoon toasted sesame oil

Instructions

Cook potstickers according to box instructions.

Prepare the dressing by adding the mustard vinaigrette to a small mixing bowl. Add the lime juice and sesame oil and whisk well to combine. Set aside.

To make the salad, in a medium bowl combine the edamame, prepared asparagus, diced avocado, arugula, and fresh herbs and drizzle with dressing.

To serve, divide the chicken potstickers and salad evenly between two plates.

*You can also serve this quick and vibrant green salad alongside your favorite prepared or frozen entree. Or, try it with tofu and rice or shrimp and noodles.
