Think of this sparkling grapefruit, rhubarb, and ginger concoction as the fancier version of a typical morning glass of grapefruit juice. The rhubarb syrup can be made several days ahead of time and stored in the fridge.
For a more adult drink, try subbing in gin or prosecco for the sparkling water.
Yield: roughly 8 to 10 drinks

2 cups roughly chopped rhubarb
1 2-inch knob ginger, peeled and sliced
1 cup water
1 cup sugar
Freshly squeezed grapefruit juice
Sparkling water
Place the rhubarb, ginger, water, and sugar in a sauce pan over medium heat. Bring to a boil and reduce heat to simmer 15 minutes. Let the mixture cool, slightly, and strain. Let cool completely.
When ready to serve, combine equal parts of the rhubarb syrup with the grapefruit juice and cold sparkling water. Garnish with a grapefruit slice.
