Amp Up Your Roasted Pumpkin Seeds With These Exciting Spice Blends

Make the most of your pumpkin carving this Halloween season by roasting the leftover seeds. Here, we’ve prepared them two ways: with a sweet pumpkin pie spice mixture, or flavored with savory za’atar.

Pumpkin Pie Spiced Pumpkin Seeds

Yield: 2 cups pumpkin seeds
Active Time: 5 minutes
Total Time: 20 minutes

2 cups pumpkin seeds
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
Pinch cloves
1 tablespoon maple syrup

Preheat oven to 375 degrees and line a baking sheet with parchment paper.

Toss pumpkin seeds with rest of ingredients in a large bowl and spread onto prepared baking sheet. Roast in oven 10 to 15 minutes. Let cool.

Za’atar Spiced Pumpkin Seeds

Yield: 2 cups pumpkin seeds

Total Time: 20 minutes

1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon sesame seeds
1 teaspoon sumac
1 1/2 teaspoons sea salt
Zest of 1 lemon
1 tablespoon olive oil

Preheat oven to 375 degrees and line a baking sheet with parchment paper.

Toss pumpkin seeds with rest of ingredients in a large bowl and spread onto prepared baking sheet. Roast in oven 10 to 15 minutes. Let cool.
