It’s no secret that dressing is often a salad’s biggest calorie bomb. Not so here: This flavorful dressing gets big flavor and big nutrition from beta carotene–rich carrots and healing fresh ginger. Coconut aminos—a non-GMO, gluten-free, low-glycemic alternative to soy sauce that has 65 percent less sodium—also adds some savory pizzazz.

1 medium carrot
2 tablespoons fresh ginger, chopped
1 teaspoon brown sugar or coconut sugar
2 tablespoons rice vinegar
1 teaspoon fresh lemon juice
2 teaspoons coconut aminos
2 teaspoons sesame oil
Pinch of salt
Put all ingredients into a blender and pulse until smooth. Done! Drizzle it on greens and sad salad will be a thing of the past.
