You’ve never had banana bread like this before. Rich and moist with thick swirls of honeyed almond butter, it makes a decadent breakfast or sweet afternoon snack. The best part? Since it all starts with Simple Mills Banana Muffin Mix, the recipe is easy enough for even novice bakers to whip up.
Yield: 1 loaf
Active Time: 10 minutes
Total Time: 1 hour and 10 minutes
2 large eggs, at room temperature
1 cup unsweetened vanilla almond milk
2 tablespoons melted coconut oil or ghee
1 package Simple Mills Banana Muffin Mix
2 large ripe bananas, sliced
3/4 cup almond butter
3 1/2 tablespoons raw honey
1/3 cup roughly chopped almonds
Preheat oven to 350 degrees and line bottom and sides of standard-sized loaf pan with parchment paper.
Whisk eggs, almond milk, and oil together in large bowl. Add baking mix and mix until thoroughly combined. Fold in sliced bananas.
In small saucepan or microwaveable bowl, stir together almond butter and raw honey. Warm mixture on stove or in microwave until runny and viscous.
Pour half of banana batter into prepared pan, then top with three-quarters of almond butter mixture. Follow with remaining banana batter and top with almond butter mixture. Use wooden skewer to marble and swirl the batter. Top with chopped almonds, then bake in oven for 1 hour. Cool in pan completely before serving.
